It all began in a graphic coastal village of Boeotia, with a cottage industry that was created under the care and talent of Maria Loukia Marinou. Her home-made art of cookery aimed at combining pure ingredients from the natural wealth of the Greek soil with her knowledge of the Mediterranean traditional cuisine. Her goal was to bring back to the dinner table dishes that would emanate old forgotten fragrances and the taste of pure, natural ingredients.
The products of this cottage industry were received with particularly positive comments by people who are professionally involved in quality cuisine, by the most accredited connoisseurs in matters of taste, but also by consumers who seek for quality, tasteful and healthy food.
Hence the increase of consumers seeking quality products and their demand led Maria Loukia Marinou to build a unit with the cooperation of Panagiotis Nikas and his son, George, who are well known due to their extensive experience in the field of quality foods. This new unit was built in the healthy environment of a plateau in Fokida, with the appropriate production capacity so that the products may be strictly controlled for quality and consistent levels of flavours.
With the slogan “Mother Nature” and the symbol of the sunflower, which the locals call “Liostrofi”, we created a series of seasonings with sweet and sour tastes, such as those found in the tasty herbs of the Greek flora gathered of the islands coasts.
We searched through ancient Greek literature, such as scripts of Hippocrates, Aristotle, Lysias, etc. and found that honey vinegar was a healthy beverage, but also a seasoning for their food. We saw that sweet and sour food was not just a tradition in the Far East, but that it is also mentioned in the dietary of Ancient Greeks. So, with the kind assistance and offer of Nikos Fotiadis, maitre-chef, we adjusted and enriched these ancient flavours to the demands of modern quality cuisine, without deviating, even in the slightest manner, from their basic characteristics, which is the use of natural ingredients only.
We aspire to make our unit an example of the application of modern technology, so to ensure food safety for our consumers, but also for the natural environment in general, by excluding all factors of pollution emanation.

Oxymeli is an ancient ingredient which is mentioned in scripts of great physicians and philosophers of antiquity, such as Hippocrates, Aristotle, Lysias and many more.
Using all that is mentioned in those scripts about the basic ingredients that created this taste, we currently produce this seasoning, including also extracts from figs and black raisins, pieces of which may be found in the bottle to stabilize its flavour in the long-term.
The fragranced “Liostrofi” salt for fish is salt gathered from the Messolongi lagoon, which we fragrance with aromatic mountain herbs and add a discrete touch of mastic from the island of Chios. This is how fish achieves a unique flavour when sprinkled with this roast fish seasoning.
This fragranced salt for meat, an inspiration of “Liostrofi”, gathered from the historical Messolongi lagoon, is fragranced with a variety of aromatic herbs of the Greek flora. It takes all the flavour of the roasted meat and gives back a unique fragrance.

The “Liostrofi” aromatic extra virgin olive oil with garlic, oregano and olives is a pure, fruity juice of extra-virgin olive oil that derives from the olive groves of Koronia in the region of Sparta and is combined with the fragrances of garlic and freshly cut oregano. A perfect combination of Health and Taste.
The “Liostrofi” aromatic extra virgin olive with mastic from the island of Chios is the same extra virgin olive oil from the same region of Sparta and from the olive groves of Koronia, but this time, it is fragranced with the natural mastic of the island of Chios, which is unique world-wide, and lemongrass. This is a very unique taste at the dinner table.

The “Liostrofi” sun-cured tomato with caper leaves, is tomato dried in the sun and not in the oven, with caper leaves set in wine, garlic, wine-vinegar and excellent virgin olive oil. An unrivalled appetizer that prepares the appetite for more to come!
The sweet and sour capsicums “Liostrofi” are an artistry sweet and sour composition of red and green capsicums from Florina, with onion, wine vinegar, sugar, mustard seed and spices. For salads, meat and delicious improvisations.
The sweet and sour zucchini “Liostrofi” is made of delicate zucchini, cut into cubes, with onion, salt, vinegar, mustard seed and spices. A highly delicious composition that can accompany any dish or be served on its own as a fine appetizer with beer.
The sweet and sour beetroot with apple “Liostrofi” at first glance seems to be of a strange composition which, in the end surprises those who taste it. It has beetroot, orange, apple, onion, vinegar, sugar, lemon, garlic, hot peppers and spices. It adds a particular taste to all green salads, but it can be combined with other tastes too, such as meat dishes. It should also be tried, however, on its own.
The sweet and sour gherkin with capsicums “Liostrofi” is made of small gherkins with red, green and yellow capsicums, vinegar, dark sugar, mustard and spices. It is ideal when served with roasted meat, smoked fish and hard cheese.
